BLACK BEAN VEGGIE BURGERS

Packed with flavor, these vegetarian burgers are the bomb!

Makes: 4 (10 sample) servings

Time: 20 Minutes (plus freezing and grilling time)

Ingredients

  • 1 16 ounces can of black beans, rinsed and thoroughly dried in paper towel
  • 1/2Cup Onion, small, chopped (or frozen for young chefs to avoid tears)
  • 1/2Cup Red Pepper, chopped
  • 1Egg
  • 3Garlic Cloves, minced
  • 1Tablespoon Chili Powder
  • 1/2Teaspoon Cumin Powder
  • 3/4Cup breadcrumbs (or gluten-free alternative)
  • 1/4Cup Sweet N’ Hot Salad Peppers (Jar)
  • 1Teaspoon Lemon Juice
  • 1-2Liquid Smoke, a dash or two
  •  Salt & Pepper to taste

Directions

Put all ingredients in a food processor and pulse on/off.

When in off position, use spatula to scrape down sides of the mixture until well blended and consistency is slightly sticky.

Using hands, form into 4 balls and press down into a shape of a patty (or use burger patty maker such as Tupperware) to form patty shapes.

Freeze between layers of waxed paper and place in a ziplock bag.

When ready to cook, preheat grill to medium-high heat.

Spray tin foil with cooking spray and lay on grill.

Place patties on grill and allow to cook for approximately 7-9 minutes per side.

Patties will become dry to the touch on the outside but will be moist on the inside.

Serve on a bun with your favorite toppings like grilled onions, cheese, tomatoes, lettuce, ketchup and mustard.

Omit the egg and cheese topping to make it vegan.

Omit or substitute the bun for gluten-free.
