Grilled Pizza Pesto Sandwich
Makes: 10 servings
Time: 15 Minutes
- 20 Slices packaged mozzarella cheese, cut in half lengthwise
- 1 Loaf whole grain Italian or French bread (20 slices)
- 1 small jar pizza sauce
- 1 small jar pesto sauce
- 50 Slices pepperoni (preservative-free) or salami, or other Italian deli meat (preservative-free)
Arrange a cheese slice on one side of 10 pieces of bread. Top each slice of cheese with a tbsp. of pizza sauce. Arrange a second slice of cheese on top. Spread evenly with pesto sauce. Arrange about 5 slices of pepperoni (or alternative preservative-free meat or veggies) on each sandwich. Top with second slice of bread. Melt a small amount of butter in a skillet or on pancake griddle and place sandwich in pan. Flip when bottom is brown and continue to cook on second side until browned and cheese is melted. Remove and cut in half on the diagonal.
*You can also add fresh veggies like lettuce, tomatoes, olives, sweet onions, and roasted red peppers, etc.
*Preservative free turkey or ham make optional substitutions.
*Use veggies, pesto, marinara sauce and cheese to make it a vegetarian option.
