TANGY MASHED CAULIFLOWER
Makes: 4 (10 samples) servings
Time: 20 Minutes
- 1 Head Cauliflower
- 1/3 Cup Sour Cream or Vegan Alternative
- 1 Tablespoon Prepared Horseradish
- Salt & Pepper to taste
- Fresh Parsley, finely chopped
Wash cauliflower and trim off any parts that need trimming.
Break cauliflower pieces into large chunks.
Steam cauliflower until very well done
**note: If you have an Instant Pot, save on time – it only needs 4-5 minutes.
Place well-steamed cauliflower in a deep bowl or into a food processor
Add sour cream and horseradish
Mix well with a handheld mixer or food processor until creamy.
Add salt and pepper to taste
Place cauliflower mixture in a piping bag.
Pipe into individual mounds.
Top with chopped fresh parsley.
