EASY VEGGIE SCRAMBLE
Makes: 1 serving
Time: 10 Minutes
- 1 Teaspoon Olive Oil
- 1 Large Egg, whipped
- 1/4 Small Onion, chopped
- 1/4 Tomato, chopped
- 1 Tablespoon Preservative Free Bacon Bits
- 6 Spinach Leaves
- 2 Tablespoons Sharp Cheddar Cheese, shredded
- Salt and Pepper
Heat oil in a nonstick skillet.
Saute onions until sweet and tender.
Add tomatoes and bacon bits and stir to heat through.
Add spinach leaves and cook until wilted.
Add beaten egg and gently stir and fold the mixture until the egg is cooked through.
Season with salt and pepper.
Transfer veggie scramble to a plate and top with a sprinkle of shredded cheddar cheese.
Makes 1 serving.
