SPECIAL OCCASION DESSERT PARFAIT
Makes: 8 (5 oz.) servings servings
Time: 30 minutes
- 2 Cups fresh whipping cream
- 2 Tablespoons Sugar
- 2 Tablespoons real vanilla extract
- 24 organic strawberries, sliced lengthwise
Combine cream, sugar, and vanilla. Using hand mixer of a stand mixer with a whisk attachment, whisk until peaks stand on their own.
If making in class, divide whipped cream into 8 ziplock bags. Seal bags and cut off about 1/2 inch from one corner. (If making at home, one large ziplock bag will do.)
Working quickly and avoiding handling the bag too much (hand heat can cause the whipped cream to liquify), pipe a small amount of cream into parfait dish to cover the bottom, being careful not to smudge the sides of the dish with whipped cream. Carefully arrange 4-6 strawberry slices along the sides of the dish to show through. Pipe another layer of whipped cream to create another layer and add more strawberries as before. Finish the top with a piped swirl of whipped cream and garnish with a strawberry slice.
