HERBED BABY BAKERS
Makes: 6-8 (10 samples) servings
Time: 15-20 Minutes
- 18-24 Small Red Skinned Potatoes, washed
- 3-4 Tablespoons Extra Virgin Olive Oil
- Salt and Pepper
- Your Choice of Fresh or Dried Herbs
Wash potatoes and place in a large pot. Cover 2/3 full with water, add salt and bring to a boil.
Once boiling, reduce to a gentle simmer 10-12 minutes or until the desired doneness when pierced with a fork. Drain water and potatoes into a colander placed in the sink.
Return potatoes to the pot and add olive oil, salt, and pepper.
Sprinkle any additional herbs such as 1 tsp. dried basil, rosemary, dill, parsley, or thyme for every dozen potatoes, or 2 tsp. of fresh, chopped herbs.
