TOASTED EGG SALAD MUFFIN
Makes: 1 servings
Time: 30 minutes
- 1 Large Hard Boiled Egg
- 1 Tablespoon Plain Greek Yogurt
- 1/2 Teaspoon Dijon or Yellow Mustard (Optional)
- Pinches Onion Powder
- Salt and Pepper
- 1 Toasted Whole Wheat English Muffin or Sprouted Grain Muffin
Peel egg and mash egg with a fork. Add yogurt, mustard, onion powder, salt&papper and mix well.
Toast English Muffin and spread with butter and 1/2 egg mixture onto each slice. Serve open saved with fresh fruit or sliced tomatoes.
*Dairy products can be substituted with hard-boiled alternative products.
