RED PEPPER EGG & CHEESE WRAP
Makes: 1 servings
Time: 20-25 Minutes
- 1 Egg + 1 egg white
- 1/4 Red Pepper, chopped
- 1 Ounce Shredded Low-Fat Cheddar Cheese
- Salt and Pepper
- 1 Whole Wheat Tortilla
- Non-Stick Cooking Spray
Whip egg, egg white, red pepper, and salt & pepper with a fork until blended.
Pour into a heated non-stick pan coated with non-stick cooking spray.
Allow egg mixture to cook on the bottom, breaking the surface to allow runny mixture to cook. Flip when firm and continue until egg is thoroughly cooked through.
Remove from heat and fold egg mixture. Sprinkle with cheese and allow to melt.
Roll inside a whole grain tortilla shell. Serve with fresh grapes or your favorite fruit on the side.
