FOIL BAKED VEGGIES

Makes: 2-3 (10 sample) servings

Time: 25-30 Minutes

Ingredients

  • 1 Red, Yellow, or Green Bell Pepper, Cut into bite sized pieces
  • 1 Medium Yellow Onion, Cut into bite sized pieces
  • 3 Medium Carrots, sliced
  • 1 Garlic Clove, Minced
  • 1 Cup Zucchini, Washed and cut into bite sized pieces
  • 2 Tablespoons Olive Oil
  • 1 Teaspoon Dried Oregano
  • Salt and Pepper

Directions

Preheat grill to medium heat or heat oven to 350°. Cut a large sheet of aluminum foil and lay on a flat surface.

Place veggies in center of foil, sprinkle with seasonings and drizzle with olive oil.

Wrap the veggies so that there is still air inside, but tightly sealed on the outside. Place packet on top of the grill or in an oven for 10-15 minutes.

Do not turn. Remove packet from grill with oven mitts and transfer packet to a waiting plate.

Carefully open foil and serve directly from the packet.
