SWEET POTATO FRIES
Makes: 10 servings
Time: 60 -75 Minutes
- Non-Stick Cooking Spray
- 2 Medium Sweet Potatoes, scrubbed
- Salt and Pepper
- 1 Teaspoon Dried Thyme
- Ground Cinnamon
- Cayenne Pepper (Optional)
Cut potatoes into 1/4 inch wide fries leaving the skin on. Place in a bowl and sprinkle with salt letting stand for 20 minutes to allow moisture to release.
Heat oven to 450°. Spray cookie sheet with non-stick spray or use parchment paper.
Remove potatoes from bowl and place on some paper towel to absorb any excess moisture.
Place potatoes on prepared cookie sheet and sprinkle with thyme, salt, pepper, cinnamon, and cayenne pepper.
Bake the fries for approximately 35-45 minutes until tender and golden.
