Makes: 8-9 servings, Time: 20-25 Minutes
- 1 Pound Boneless Pork Cutlets – Thin Cut (about 8 or 9 pieces)
- Salt and Pepper
- 1 Cup Whole Wheat Flour
- 2 Eggs, whisked + 1 Tbsp. water
- 1 Cup Plain Breadcrumbs
- 3 Tablespoons Extra Virgin Olive Oil
Trim fat from cutlets.
Place cutlets in a large ziplock bag and pound until flat and very thin.
Season both sides of cutlets with salt & pepper.
Choose 3 small bowls and place flour in one bowl, eggs in the second bowl, and breadcrumbs in the third bowl.
Using a fork, dredge each cutlet through the flour, the egg, and the breadcrumbs coating everything on both sides.
Heat oil in a large nonstick pan over medium heat.
Fry cutlets on both sides until browned and cooked through.
