CHEESY TURKEY ENCHILADAS

Makes: 4 servings

Time: 30 minutes

Ingredients

  • 12 Ounces Organic Ground Turkey Breast
  • 4 Whole Wheat Tortillas (9
  • 2/3 Cup Spicy Black Bean Dip
  • Salt and Pepper
  • 12 Ounces Jar of Salsa
  • 1 Cup Mexican Cheese Blend
  • Dried Parsley

Directions

Preheat oven to 450°. In a non-stick pan, fry turkey until no longer pink. Remove from heat.

Stir the black bean dip into the turkey and season with salt and pepper. Lay the tortillas on work surface and fill each one with 1/4 of the turkey mixture.

Roll tightly and lay seam side down in a square baking dish. Spoon the salsa over the enchiladas and top with shredded cheese.

Bake for 10-12 minutes or until cheese is melted and bubbly.

Remove from oven and sprinkle the top with dried parsley.

Variation:  Turkey can be seasoned with a bit of taco seasoning and scale back a bit on the beans of texture is an issue for some children.
