FIESTA BUDDHA BOWL WITH CILANTRO LIME VINAIGRETTE

Makes: 10 servings

Time: 30-35 Minutes

Ingredients

  • 1 Bunch Cilantro, Washed
  • 1 Jalapeno (optional)
  • 3 Large Cloves Garlic, Minced
  • 4 Tablespoons Fresh Lime Juice
  • 1 Tablespoon Honey
  • Salt and Pepper to Taste
  • 4 Tablespoons Extra Virgin Olive Oil or Avocado Oil
  • 10 Chicken Tenderloins
  • 2 Bell Peppers, Diced
  • Jar of Black Olives, Sliced
  • 3 Avocados, Diced
  • 10 Cups Cooked Brown Rice
  • 5 Cups Black Beans, Canned

Directions

Cook rice using package directions. Set aside.

Using the first 7 Ingredients create the Cilantro Lime Vinegarette.

Place the cilantro, jalapeno, minced garlic, lime juice, salt, and pepper and jalapeno if desired into a blender, and blend until smooth, about 30 seconds. Add the olive oil, and blend for a few seconds, until just incorporated. Taste and make any necessary seasoning adjustments. Set aside.

Dice washed Bell Peppers and place in a serving bowl. Drain and rinse black beans and place in a serving bowl. Drain Sliced olives and place in a serving bowl. Slice and remove the pit of the avocados, then dice fruit and place into a serving bowl.

Sautee chicken in a small bit of olive oil until no longer pink and internal temp reaches 165 degrees.

Assemble Fiesta Buddha Bowls by placing a 1/2 cup to 1 cup rice in the bottom of the bowl. Top with remaining ingredients then drizzle with Cilantro Lime Vinegarette and enjoy.
