HEALTHY VEGGIE NACHOS

Makes: 1 servings

Time: 5 Minutes

Ingredients

  • 15Multigrain Tortilla Chips (or organic black bean chips, baked whole grain tortillas, pitas, brown rice chips, flaxseed chips, etc)
  • 2Tablespoons Mild Salsa
  •  2% Mexican Cheese Blend, shredded
  •  Assorted chopped toppings such as chopped tomatoes, green onions, olives, jalapeno peppers, sweet peppers, onions, zucchini, artichokes, mushrooms, olives, etc.

Directions

Place a single layer of tortilla chips on a paper plate.

Sprinkle with salsa and veggie toppings of your choice.

Sprinkle cheese on top and microwave on high for 60-90 seconds until cheese melts and natchos are hot.

Can be served with a side of sour cream or non-dairy sour cream.

*Can also be spread out on a cookie sheet and baked for 15 to 18 minutes in a 350 degree oven.
