3 Bean Mood Boosting Salad

Makes: 20 (40 Samples) servings

Time: 1 Hour


  • 1 medium red pepper, minced
  • 2 carrots, minced
  • 1 yellow squash, minced
  • 15 Ounces frozen corn
  • 15 Ounces organic black beans
  • 15 Ounces organic kidney beans
  • 15 Ounces organic garbanzo beans
  • 1/2 Cup scallions, chopped
  • 1/2 Cup red onions, finely minced
  • 2 Tablespoons Fresh Basil, minced
  • 2 Tablespoons fresh oregano, minced
  • 2 Tablespoons fresh parsley, minced
  • 3 Cloves Garlic, minced
  • 1/2 Cup red wine vinegar (or apple cider vinegar or maple infused vinegar)


Add the first 13 ingredients into a large mixing bowl.  Mix thoroughly.  You can use a food processor to mince/chop veggies for faster prep.  Add the vinegar, olive oil, lemon juice and salt and pepper to taste and mix again thoroughly.  Refrigerate for at least 30 minutes and even better overnight!
