APPLE PANCAKE TOPPING
Makes: 4 servings
Time: 20 Minutes
Ingredients
- 3 Medium Sized Granny Smith Apples
- 2 Tablespoons Sugar (or Stevia)
- 1 Teaspoon Ground Cinnamon
- 1/4 Teaspoon Freshly Grated Nutmeg
- 1 Tablespoon Lemon Juice
- 2 Tablespoons Butter
- 1/4 Cup water
Directions
Combine sugar, cinnamon, and nutmeg.
Quarter the apples then slice crosswise into 1/4-1/8 inch chunks.
Combine apples, lemon juice and sugar mixture in a large bowl. Over medium heat, melt butter.
Add apple mixture and saute about 2 minutes, stirring constantly. Add water, reduce heat to low, cover and let cook 5 minutes.
Uncover and raise heat back to medium and continue to cook until liquid has evaporated. Top pancakes with 1/4 of the apple topping and serve.
For added sweetness, offer powdered sugar or maple syrup.
