MATZO BREI

Try these simple and delicious pancakes.

Makes: 8-10 (20 samples) servings

Time: 15-20 Minutes

 

Ingredients

  • 4Pieces of Matzo
  • 1/2Cup water or if you prefer Milk, almond milk etc
  • 4Eggs
  •  Salt and Pepper
  • 2Tablespoons vegan butter or regular butter
  • 2Tablespoons vegetable oil or Olive Oil
  •  Maple syrup, powdered sugar, blueberries or preserves (optional)

Directions

In a mixing bowl, break the matzo into 1-inch pieces.

Crush with hands in a bowl. Kids love this part!

Boil water/milk and after its done boiling pour over the matzos.

Let it soak for approximately 5 minutes.  Matzo should be “soggy”.

Quickly toss the matzo, then drain off any excess with a colander or pasta strainer.

In a bowl, beat the eggs with a fork. Mix the eggs, salt, and pepper into the matzo.

Mix entire bowl together.

Over high heat, heat the butter or oil in a large sauté pan. Add the matzo and fry until crisp similar to a pancake style. Flip over to fry the other side, breaking into pieces as it cooks.

Serve with Maple syrup,  powdered sugar or preserves.
