Mediterranean Chicken Salad

A very versatile salad that can be made vegan or vegetarian with a few simple changes!

Makes: 1 servings

Time: 20-40 Minutes

Ingredients

  • 1 Fully Cooked Boneless Skinless Chicken Tender
  • 2 Cups Mixed Greens (your favorite)
  • 1/3 Cup Marinated Artichokes Hearts-Diced
  • 1/3 Cup Cherry Tomatoes- Sliced
  • 1/3 Cup Red Onion- Diced
  • 1/3 Cup Cucumber Diced
  • 1 Tablespoon Crumbled Feta
  •   Lemon (optional)
  •   Light Salad Dressing (optional)

Directions

Place salad greens in large bowl or on plate.

Slice pre-cooked grilled boneless skinless chicken tenders diagonally and lay across the center of the salad greens. Chicken tenders can be basted with balsamic dressing as you grill them to give them a nice flavor. You can also use a single chicken breast or leave the chicken off all together.

Dice Marinated Artichokes, tomatoes, onion and cucumbers and neatly place around the chicken. If not using chicken you can add chickpeas (rinsed and drained) or even add some mixed olives!

Sprinkle with crumbled feta! (you can leave off the feta as well for a Vegan or Dairy-free version)

The artichoke marinade left on the artichokes (olive oil and seasoning) was enough dressing to moisten the salad, but you can also add your favorite light dressing or a nice squeeze of lemon and a little olive oil!
