Whipped Cauliflower

Looking for a substitute for mashed potatoes? This may be it.

Makes: 4-6 servings

Time: 20 Minutes

Ingredients

  • 1 Head of Fresh Cauliflower
  • 1-2 Tablespoons Butter
  • 1 Tablespoon Cream
  •   Salt and Pepper
  •   Fresh Chives
  •   *Optional: 1/2 tsp. garlic powder

Directions

Wash and dry cauliflower and cut into florets.

Steam or boil cauliflower until tender and breaks apart with a fork.

Place cauliflower in colander and allow water to fully drain.

Transfer cauliflower back to a pot and mash using a potato masher.

Add butter, cream, salt, pepper and garlic powder if using.

Mash until creamy.

Top with chopped chives for garnish.
