COOKIE DOUGH PROTEIN BALLS
Makes: 32 Cookie Balls servings
Time: 30 Minutes
Ingredients
- 15 Ounces Canned Chickpeas, drained and rinsed
- 6 Tablespoons Maple Syrup
- 1/2 Cup sunflower seed butter (or other nut/seed butter of your choice)
- 1 Teaspoon Vanilla Extract
- 1/2 Teaspoon Salt
- 1/2 Teaspoon Ground Cinnamon
- 1 Cup Oat Flour
- 1/3 Cup Mini Chocolate Chips
Directions
In a food processor, puree chickpeas, maple syrup, sunflower seed butter, and vanilla extract until smooth (about 1 minute).
Add in the salt, cinnamon, and the oat flour. Pulse until the dough forms a ball. Add in more maple syrup, sunflower seed butter, or oat flour as needed. You should be able to roll the dough into balls.
Scrape mixture into a bowl and add in chocolate chips–you may have to use your hands to work them in, depending on how soft the dough is.
Roll into 1″ diameter/tablespoon sized balls and store in the fridge in an airtight container for up to 1 week or up to 3 months in the freezer.
