DOUBLE CHOCOLATE BRAN MUFFINS
Makes: Makes 12 servings
Time: 25 minutes
Ingredients
- 1 1/2 Cup Whole Wheat Flour
- 3 Tablespoons Unsweetened cocoa
- 3 Teaspoons Baking Powder
- 1/2 Teaspoon Salt
- 3 Tablespoons Organic Sugar
- 3/4 Cup Grape Nuts Cereal
- 3 Large eggs, beaten
- 1 Cup almond milk
- 3 Tablespoons Coconut oil
- 2 Teaspoons Vanilla
- 1/4 + 2 Tbsp.Cup chocolate chips (or raisins)
Directions
Preheat oven to 425 degrees.
Place 12 paper muffin cups in a muffin tray.
Dry Ingredients: Measure and stir flour, cocoa, baking powder, salt, sugar and grape nuts cereal.
Wet Ingredients: Whip eggs with a whisk and stir in milk, coconut oil, and vanilla.
Gently fold wet ingredients into dry ingredients just until moist. (Do not over stir).
Fold in 1/4 cup chocolate chips.
Place 2/3 batter in each muffin cup.
Top each muffin with a few more chocolate chips.
Bake for 18 to 22 minutes. Let cool on a rack.
