EASY CHICKEN PICCATA

Fancy restaurant food can become a weeknight staple with this easy and delicious chicken dish.

Makes: 5-6 servings

Time: 30 minutes

Ingredients

  • 5-6Organic Chicken Breasts pounded flat
  •  Salt and Pepper
  • 1/4Cup Flour
  • 2Tablespoons Olive Oil
  • 2Tablespoons Butter
  •  Lemon Reduction Sauce
  • 1/2Cup Organic Chicken Stock
  • 2Lemons, one for garnish
  • 2Tablespoons Capers, drained
  • 1Tablespoon Butter
  •  Dried or Fresh Parsley

Directions

Pound chicken flat and season both sides with salt and pepper.

Dredge through flour to coat chicken on both sides.

Heat 2 Tbsp each of olive oil and butter in a shallow pan over medium heat.

Brown chicken on both sides until chicken is no longer pink and cooked through.

Transfer chicken to a platter and cover with tinfoil to keep warm.

Lemon Reduction Sauce

Stir the chicken stock, the juice of one lemon, and capers in a small bowl or glass measuring cup. Pour stock into a pan and let the sauce simmer for approximately 8-10 minutes until it is reduced by half. Add 1 Tbsp. butter and stir until melted. Pour sauce over chicken and garnish with fresh cut lemon slices and a sprinkle of parsley. Serve with fresh steamed veggies.

Makes 5-6 servings.
