GLUTEN-FREE PEANUT BUTTER BLONDIES

Makes: 9 Blondies servings

Time: 30 Minutes

Ingredients

  • 1 can chickpeas (garbanzo beans), rinsed and drained
  • 1/2 Cup Peanut Butter
  • 1/4 Cup honey or vegan sweetener
  • 1/4 Cup Coconut Sugar
  • 1 Tablespoon almond milk
  • 2 Teaspoons Vanilla Extract
  • 1/2 Teaspoon Salt
  • 1/2 Teaspoon Baking Powder
  • 1/4 Teaspoon Baking Soda
  • 1/2 Cup chocolate chips

Directions

  1. Preheat oven to 350 degrees F. Grease a 9’’ baking dish, set aside
  2. Put all ingredients into blender/ food processor, blend until creamy and smooth
  3. Once smooth, add chocolate chips and mix by hand
  4. Pour mixture into your prepared pan and spread out evenly
  5. Sprinkle extra chocolate chips on top
  6. Bake in the oven for 20-30 min until edges pull away from the pan and the top is slightly golden brown
  7. Let cool, then enjoy!
