GLUTEN-FREE PEANUT BUTTER BLONDIES
Makes: 9 Blondies servings
Time: 30 Minutes
Ingredients
- 1 can chickpeas (garbanzo beans), rinsed and drained
- 1/2 Cup Peanut Butter
- 1/4 Cup honey or vegan sweetener
- 1/4 Cup Coconut Sugar
- 1 Tablespoon almond milk
- 2 Teaspoons Vanilla Extract
- 1/2 Teaspoon Salt
- 1/2 Teaspoon Baking Powder
- 1/4 Teaspoon Baking Soda
- 1/2 Cup chocolate chips
Directions
- Preheat oven to 350 degrees F. Grease a 9’’ baking dish, set aside
- Put all ingredients into blender/ food processor, blend until creamy and smooth
- Once smooth, add chocolate chips and mix by hand
- Pour mixture into your prepared pan and spread out evenly
- Sprinkle extra chocolate chips on top
- Bake in the oven for 20-30 min until edges pull away from the pan and the top is slightly golden brown
- Let cool, then enjoy!
