ORANGE POMEGRANATE SALAD

Ingredients

  • 1 Large Bunch of Spinach (4 Cups)
  • 3 Oranges or other sweet citrus fruits
  • 1 Large Pomegranate
  • 1/2 shallot, sliced very thinly
  • Sea salt and freshly ground pepper to taste
  • 2 Cloves Garlic, minced
  • 2 Teaspoons freshly squeezed orange juice
  • 1/4 Cup Apple Cider Vinegar
  • 1 Tablespoon Dijon Mustard
  • 1/4 Teaspoon Salt (optional)
  • 1/4 Teaspoon Honey
  • 3/4 Cup extra-virgin olive oil
  • Pinch of freshly ground black pepper

Directions

In a small bowl or mini blender, mix together all of the dressing ingredients and set aside.

Dressing:

  • 2 cloves garlic, minced
  • 2 tsp. freshly squeezed orange juice
  • 1/4 cup apple cider vinegar
  • 1 tbsp. Dijon mustard
  • 1/4 tsp. salt (optional)
  • 1/4 tsp. honey
  • 3/4 cup extra-virgin olive oil
  • Pinch of freshly ground black pepper
  1. Cut very top and bottom off of oranges. Carefully slice off peel, removing white pith while sparing as much flesh as possible. Cut into 1/2-inch thick slices.
  2. Pour most of the dressing over the spinach. Mix. Pour spinach onto platter and tuck oranges throughout. Scatter the pomegranate arils and shallots.
  3. Drizzle with remaining dressing and sprinkle with freshly ground pepper
