ORANGE POMEGRANATE SALAD
Ingredients
- 1 Large Bunch of Spinach (4 Cups)
- 3 Oranges or other sweet citrus fruits
- 1 Large Pomegranate
- 1/2 shallot, sliced very thinly
- Sea salt and freshly ground pepper to taste
- 2 Cloves Garlic, minced
- 2 Teaspoons freshly squeezed orange juice
- 1/4 Cup Apple Cider Vinegar
- 1 Tablespoon Dijon Mustard
- 1/4 Teaspoon Salt (optional)
- 1/4 Teaspoon Honey
- 3/4 Cup extra-virgin olive oil
- Pinch of freshly ground black pepper
Directions
In a small bowl or mini blender, mix together all of the dressing ingredients and set aside.
Dressing:
- 2 cloves garlic, minced
- 2 tsp. freshly squeezed orange juice
- 1/4 cup apple cider vinegar
- 1 tbsp. Dijon mustard
- 1/4 tsp. salt (optional)
- 1/4 tsp. honey
- 3/4 cup extra-virgin olive oil
- Pinch of freshly ground black pepper
- Cut very top and bottom off of oranges. Carefully slice off peel, removing white pith while sparing as much flesh as possible. Cut into 1/2-inch thick slices.
- Pour most of the dressing over the spinach. Mix. Pour spinach onto platter and tuck oranges throughout. Scatter the pomegranate arils and shallots.
- Drizzle with remaining dressing and sprinkle with freshly ground pepper
