WHOLE WHEAT BANANA CREPES

Makes: 6-7 (or 10 samples) servings

Time: 10 Minutes

Ingredients

  • 1 Egg
  • 1/2 Cup Plain Non-Fat Milk
  • 1/4 Cup Whole Wheat Flour
  • 2 Bananas, separated
  • 1 Teaspoon Organic White Sugar
  • Pinches Salt
  • Butter
  • Optional: Powdered sugar for dusting

Directions

Place egg, milk, flour, one banana, salt, and sugar in a blender.  Blend until smooth.

Heat nonstick pan over medium heat.

Melt a small amount of butter on the bottom of the pan.

Pour crepe batter into pan making one crepe approximately 5-6″ in diameter.

Turn when the underside is browned and edges are bubbly.

Cook on the second side until browned.

Remove crepe to plate.  Place 2-3 slices of banana inside and roll like a log.

Repeat with remaining batter and bananas.

Dust crepes with powdered sugar and any remaining banana slices.

Makes 6-7 crepes.
