KALEIDOSCOPE FRUIT PIZZA

Makes: 8 5-inch pizzas servings

Time: 1 hour

Ingredients

  • 2 Cups unbleached pastry flour
  • 2 Teaspoons White Sugar (can be reduced by 1/2 if desired)
  • 1 Teaspoon Salt
  • 2/3 Cup unsalted butter
  • 4-7 Tablespoons ice water
  • 4 Ounces cream cheese, at room temperature
  • 1/4 Cup Cream
  • 2 Tablespoons Honey
  • 2 Teaspoons Lemon Juice
  • 1/2 Teaspoon lemon zest
  • 3 kiwi fruits
  • 1/2 Cup raspberries
  • 1/2 Cup blueberries
  • 3 mandarin oranges
  • 8 strawberries

Directions

Preheat oven to 375 degrees F. Line baking sheet with parchment paper.

Roughly chop the butter and combine it with flour, sugar, and salt. Using a fork or pastry blender tool, mix well until butter forms small pea-sized shapes. Slowly add ice water, using just enough for the dough to incorporate. Knead with hands to work in last dry crumbs.

Divide dough into 8 pieces and roll out to 1/8th-inch thickness. Cut into 5″ rounds using a bowl for a stencil or a 5″ biscuit cutter.

Bake on a parchment lined baking sheet for 10-12 minutes or until edges are slightly golden. Remove a to cooling rack and cool for 10 min.

Meanwhile, combine cream cheese, lemon juice, lemon zest, and honey. Using a mixer with a whisk attachment or mixer, mix until smooth. Then, slowly add cream until it is whipped and thick.

Wash fruits and berries. Peel and slice oranges and kiwis. Slice strawberries. Slather 1-2 tablespoons of lemon cream cheese on each crust and then, working from the outside rim, form concentric circles of fruit towards the middle. Be creative with different shapes and sizes of fruit!

Enjoy immediately or refrigerate covered.
