EASY GREEK SALAD
Makes: 6-8 servings
Time: 10-15 Minutes
Ingredients
- 1 Cup Red Pepper, chopped
- 1 Cup Green Pepper, chopped
- 1 1/2 Cup English Cucumber, peeled and chopped
- 2 Tomatoes, chopped
- 3/4
Cup Red Onion, diced - 10 Kalamata
Olives, pitted and quartered - 3/4 Cup Reduced Fat Feta Cheese
- 3/4 Cup Olive Oil
- 1 Tablespoon White Vinegar
- Salt and Pepper
Directions
In a large bowl, toss the veggies and olives. Whisk or shake olive oil, vinegar, salt and pepper to make dressing. Just before serving, toss veggies with dressing and top with crumbled feta cheese.
